Mega Kiwi Melon Caprese Skewers

The perfect combination of salty and sweet! These are gorgeous and exploding with flavor.

Skewered with honeydew, cantaloupe, Mega Kiwi, fresh mozzarella and salty prosciutto and then drizzled with basil vinaigrette. What more could you ask for? These Mega Kiwi Melon Caprese Skewers are beyond simple! My favorite part is running out to the porch for some fresh picked basil leaves. AH.

INGREDIENTS

  • 1/2 cup Balsamic Vinaigrette

  • cantaloupe cut into cubes

  • honeydew cut into cubes

  • Mega Kiwi cut into cubes

  • 20 fresh water-packed mozzarella balls drained

  • 10 thin slices prosciutto cut in half lengthwise, gathered into ruffle

  • Small wooden skewers about 4-6 inches long

  • sea salt

  • Freshly cracked black pepper

  • basil leaves, fresh

INSTRUCTIONS

  • Thread an assortment of the ingredients on the skewer - Mega Kiwi, melon, basil leaf, mozzarella ball, ruffled prosciutto etc.

  • Arrange skewers on platter. Drizzle with vinaigrette and sprinkle with sea salt and freshly cracked black pepper. Enjoy!
