Blueberry Mega Kiwi Pie

Happy Presidents' Day! What's more American than Pie? Fun fact: this one tastes like freedom.

The perfect pie to celebrate our great nation's leaders!

Ingredients:

frozen pie crust, or homemade

4 1/2 cups fresh blueberries

2 Mega Kiwi, peeled and diced.

1/2 cup granulated sugar

1/3 cup flour

1 TBSP cornstarch

1 TBSP lemon juice

2 tsp lemon zest

Topping:

1/2 cup packed brown sugar

6 TBSP flour

1 tsp ground cinnamon

6 TBSP unsalted butter, cold and cubed

2/3 cup old-fashioned whole rolled oats

Directions:

Preheat oven to 400 degrees.

In a large bowl mix the blueberries, Mega Kiwi, sugar, flour, cornstarch, lemon juice and lemon zest. Place pie crust in a 9x9 pie pan and dump in filling. In a separate bowl mix the brown sugar, flour, and cinnamon together. Using a pastry cutter, cut in the cold butter until coarse crumbs are formed. Stir in oats and sprinkle over pie.

Place pie on a large baking sheet and bake for 25 min. 20 minutes in I cover my crust to prevent it from being burned. Keeping the pie in the oven, turn down to 375 degrees and bake for an additional 30 minutes. Allow pie to cool for 2 hours to ensure it sets properly, enjoy!
