These Mega Kiwi & Brie Bruschetta are made with just four ingredients in about 10 minutes. So easy and perfect for parties!
Yesterday while browsing Pinterest (who doesn't do that at least once a week) I saw a recipe for a strawberry brie bruschetta. It looked so colorful and sweet! But I had no strawberries in the fridge. I did have some Mega Kiwi handy, so I swapped out the strawberries for Mega Kiwi and tweaked the recipe a bit. I love how this turned out!
Here's What You Need:
7 oz Baguette Loaf
4 oz brie cheese sliced
1/4 cup honey (you may not use it all)
2-3 Mega Kiwi, peeled and sliced
Directions:
Preheat your oven to 400 degrees. Slice the baguette to about 1/2 inch pieces. Place on a baking sheet. Spread a small amount of honey over each piece, about 1/4 to 1/2 tsp for each piece. Place the brie pieces on the baguette slices. Bake for four minutes or until the cheese just begins to get melty. Place 1-2 Mega Kiwi slices on each baguette piece. Drizzle with more honey and serve immediately.
Adding honey really sweetens up the more mild tone of the Mega Kiwi, instead of the strawberries in the original recipe, so don't skip honey!
Alternate Recipe:
Swap out the brie cheese for cream cheese. If you don't want to use your oven slice the baguette and pop the slices in your toaster for 2-3 minutes. Let them cool, then spread with cream cheese, top with Mega Kiwi and drizzle with honey! If you are allergic to honey do a light dusting of powdered sugar to give it a little more sweetness (plus it will look heavenly).
This recipe is fast and easy, so there is no excuse not to try it! In the event that you don't like brie or do not want to use your oven you can do the simplified recipe found above. It is the perfect way to dress up finger foods or appetizers for a dinner party or even lunch! The best part of this recipe is that it is so versatile. You can add or change the ingredients to fit your diet or preferences! Happy eating!
