No Bake Mega Kiwi & Strawberry Cheesecake Party Parfaits

Baked or not, cheesecakes are my all-time favorite desserts especially served in individual portions. So, give this recipe a try for your up-and-coming party or celebration!

I used these parfaits for my niece and her "fun and fruity" themed birthday party. All of the kiddos loved them as a healthier party snack other than candy or other sweets (of course we still had a cake).

Here's what you need:

1 small individual pack or 6 pieces – graham crackers 8 oz. (227 g) – cream cheese softened 1/4 cup (56 g) – organic sugar 2 cups (473 ml) – heavy cream

2-3 Mega Kiwis 8 oz. – fresh strawberries

12 plastic parfait cups with spoons (or if you have your own serving dishes, use those!)

pastry piping bags (optional)


Directions:

1. Crush graham crackers and set aside until ready for use.

2. Rinse and cut fruits into small pieces.

3. Beat cream cheese and sugar until creamy consistency and sugar granules are dissolved; using spatula scrape the sides of a mixer bowl couple of times if necessary. Add heavy cream, scrape the cream cheese off the sides of the mixer bowl, and start beating on low gradually increasing the mixing speed and beat it until smooth in texture for a minute or so.

Assembling the Parfaits:

Add 2 tbsp. of crushed graham cracker crumbs onto the bottom of each cup. Fill piping bag and pipe 1/4 cup of the creamy cheesecake cream into each cup. Top each cup with cut into small pieces strawberries and Mega Kiwis.

*optional* - Fill piping bag with remaining creamy cheesecake cream and pipe a star on top of each fruit cup, and then sprinkle the cream star and fruits with remaining graham cracker crumbs.

Insert spoon into each cup, and Refrigerate for at least one hour before serving. Enjoy!
