Filled with all of your favorite flavors!
What I love about this recipe is that you can make the cake cups ahead of time (or buy some from the store) and then fill them just before serving. Now when it comes to filling them, the options are endless. For the inside make my simple whipped filling (recipe found below) and then top it off with fresh berries, chopped Mega Kiwi, or any fresh fruit. I went with what I had on hand - strawberries, Mega Kiwi, and blueberries. A dusting of powered sugar at the end is the perfect touch to finish off this adorable dessert!
Ingredients:
6 Store bought sponge cake cups
1/2 block cream cheese, room temp.
2 TBS pineapple juice
3/4 cup powder sugar
fresh fruit of your choice - peeled, chopped, and diced
more powder sugar for dusting (optional)
Directions:
Add cream cheese, powder sugar, and pineapple juice to a mixing bowl and mix with handheld mixer until smoothly incorporated.
To assemble - place cups on a platter, fill just full with cream cheese mixture. Top with fresh fruit and dust with powdered sugar. Serve immediately and enjoy!
