Fresh Mega Kiwi Vinaigrette

Easy to make with no added sugar. It's a sweet, tangy vinaigrette perfect for topping salad!

Traditional salads are a great side to any meal, but sometimes I get bored with the ever popular Ranch dressing. So I decided to try something new and oh my, it’s now one of my favorites. It takes only six ingredients and is super easy to make. In addition, Mega Kiwi is filled with vitamin C, vitamin K, and fiber – all nutrients your body needs. The bonus here is that this recipe requires no added sugar in any form. No white sugar, no honey, no maple syrup. Mega Kiwi is plenty sweet on its own!



Here's what you need:

  • 1 Mega Kiwi, peeled and quartered

  • 3 Tbsp. lemongrass mint white balsamic vinegar (or plain white balsamic vinegar)

  • 1/2 tsp. Dijon mustard

  • 1 Tbsp. thin sliced white onion (or red)

  • 1/4 tsp. pepper

  • 1/4 c. olive oil

Instructions:

  1. Place all ingredients in a small bowl and blend together until smooth. Add more vinegar or oil if it seems too thick.

  2. Serve immediately or refrigerate.



The great thing about this recipe is how easy and quick it is! And these ingredients are pretty common house hold staples, so you can whip this vinaigrette up in a pinch.


I started with peeling and quartering the Mega Kiwi followed by peeling a small white onion and thinly slicing it. Now, my husband is not a fan of red onions, so I used a white. If anyone in your family isn't an onion-lover simply half the amount called for. It will be well blended with a smooth, creamy texture so they won't get any of the crunchy onion texture. Measure the white balsamic vinegar, dijon mustard and olive oil. Once you have all of the ingredients prepped toss them in the blender!


Really any blender will work. I have a Ninja Professional Blender that I adore for anything from smoothies to guacamole. However, I used my Baby Bullet for this recipe as it is the perfect size!




Look at that Texture! So light and creamy.


For me I love the combination of Mega Kiwi and fresh strawberries in a salad. Top some mixed greens with your favorites and pour on some Mega Kiwi Vinaigrette for a refreshingly different lunch! For easy storage use a mason jar (make sure that lid is on tight) and refrigerate.
